Grainless Cauliflower NOatmeal

Who doesn’t love a warm, cozy bowl of hot cereal? Oatmeal has been my go to breakfast for so long, however a few years ago I was experiencing intense GI distress – alllll the time, it was horrible. I ended up seeing a specialist, who gave me a list of foods to avoid. You won’t believe what was top of the list, my beloved OATMEAL! are you kidding I thought?! I always heard how good oatmeal is for you (and I still believe it’s great!), it’s just not always great for every body, all the time. So I went cold turkey, it was hard and I ended up going back to eating oatmeal almost every morning despite the side effects. I’m always looking for new ways to recreate my favorite morning meal and recently have become so obsessed with Cauliflower NOatmeal. It has the same consistency and iss just as easy to prepare (you can even make it overnight NOat style), just as warm and cozy, and high in fiber so just as filling. But bonus points, it’s got more vitamins and minerals, less carbs, and it’s grain free and anti-inflammatory. Vegan, Paleo, and Whole 30 approved. Win win if you ask me.

Try it out…
Cauliflower Noats base
Ingredients:
1 cup riced cauliflower
1/2 cup nut milk of your choice
1/2 mashed banana
1/2 tbs chia seed
1 tsp ground flaxseed
1 tsp hemp seeds
a pinch of cinnamon (optional)
Make:
1. Mix everything together in a bowl
2. Microwave for 3 minutes
3. Let sit for a few minutes to let the chia seeds absorb
4. add toppings and enjoy!

“PB & J”

Toppings for PB and J Noats:
+ Caramelized banana:
>Heat coconut oil in saucepan
>slice 1 whole banana and place in heated saucepan
> keep a close eye out, and flip when they begin to brown

+ Mixed Berry Chia seed “Jelly”
> Heat 1/2 cup frozen mixed berries for 1 minute in microwave, mash, add 1 tablespoon of chia seed and let set for at least 5 minutes

+ drizzle almond butter alllll over the top
+ sprinkle of grainless granola or whatever nuts you have around!

Banana Nut Swirl

Toppings for Banana Nut Swirl 
+ 1 whole banana, sliced
+ Coconut Yogurt swirled with almond butter
+ handful of mixed nuts

Bodacious Berry

Toppings for Bodacious Berry
+ strawberries, blackberries, hemp seeds, almond butter
