Granola Apple Pie, Vegan + Gluten Free

Apple pie has always been my Dad’s most favorite treat. He frequently questions why I have yet to make him one, and specifically requests a “real one” AKA he doesn’t think vegan food can be as delicious as food that contains animal products. So, to prove him wrong I made him an apple pie for Father’s day – vegan AND gluten free. Did he ask for seconds? yes. Has he already requested one for his birthday instead of cake? Yes.

For the crust: 

1 1/2 cup almond flour

1/2 cup gluten free flour

1/2 cup coconut oil

1/4 tsp salt

1/2 tablespoon coconut sugar

1. mix together all dry ingredients

2. mix in coconut oil, until everything begins to come together

3. roll into a ball

4. flatten into a lightly greased pie dish

For the filling: 

5 apples slices thinly (I used Gala)

2 cups water

1 tablespoon cornstarch

1/2 cup coconut sugar

1 tablespoon cinnamon

a sprinkle of pumpkin pie spice

1 tablespoon lemon juice

1.  mix dry ingredients together

2. mix in the water and lemon juice

3. heat on the stove in a sauce pan until simmering, add in the apples and let simmer for 5-10 minutes until the apples are     soft

4. once the apples cool, scoop them into the pie using a slotted spoon, save the sauce for later 🙂

For the crumble topping: 

2 cups grain-free granola (I used Julie’s Real, cinnamon vanilla)

6 dates, chopped

2-3 tablespoons maple syrup

1. put all ingredients into the food processor

2. pulse until combined

3. sprinkle evenly onto pie


Once everything is put together, bake at 350F for about 25-30 minutes, keeping an eye on it to prevent burning.

Top with vegan vanilla ice cream or whipped cream, warm the extra sauce and drizzle that on top.
