Apple Sourdough CROCKPOT stuffing (Vegan, optional GF)

I’m still wondering how it is already mid-November with Thanksgiving in just a week! I’ve been doing a little recipe testing to practice what we will make on Thanksgiving. In the recent years that have passed, my parents and I have kept things VERY simple. However, this year my Mom and I decided we will cook ALL THE THINGS!  Her oven is pretty tiny so I’m looking into ways to do more cooking NOT in the oven. Which is how this CROCKPOT stuffing was born. SO easy, and more healthy than your average. This stuffing is sure to be a crowd pleaser (I mean if it passed MY Mom’s test, we know it’s good – she’s made the SAME exact stuffing every year since, forever!) So if she’s up for mixing it up, you can rest assured you’ll be glad you did too. Best part – once it’s in the crockpot you’re free to work on something else AND you save precious oven space.

This recipe is naturally vegan friendly and using sourdough bread makes it friendly for our GF friends, although you could absolutely sub any gluten free bread that you prefer. Enjoy!

Apple Cranberry Sourdough Stuffing

  • 1 loaf sourdough chopped
  • 3 stalks celery chopped
  • 1 honey crisp apple diced
  • 2 flax eggs
  • 1/4 cup vegan butter melted
  • 1/2 cup dried cranberries
  • 1/2 cup pecans chopped
  • 2 cups vegetable broth
  • 1/2 tsp sage
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1/2 tsp salt


  • Add all dry ingredients to the crockpot and gently mix
  • Pour vegetable broth and melted butter over dry ingredients 
  • Combine all ingredients, making sure all bread is coated 
  • Set crockpot on high for and hour to an hour and a half, checking occasionally, with the lid on
