Trust me. These blondies are easy peasy, fudgy, gluten free, flourless, and vegan… as if I needed another excuse to eat dessert for breakfast…

Salted Chocolate Chunk Protein Blondies

These vegan and gluten free blondies are easier than pie, made in the blender, and packed with an extra protein punch

Ingredients

  • 1/2 cup cacao espresso almond butter
  • 1 can chickpeas drained and rinsed
  • 1 cup almond flour
  • 1 vegan egg
  • 1/4 cup coconut sugar
  • 1/2 tsp sea salt
  • 1 tbsp date nectar
  • 3 tbsp almond milk
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 bar your favorite chocolate protein bar chopped

Instructions

  • 1. Blend all ingredient (except the protein bar) in a blender until smooth
    2. Stir chopped protein bar into the batter
    3. Pour batter into a lined loaf pan
    4. Sprinkle sea salt on top
    5. Bake for 20-25 minutes at 350F, or until a tooth pick comes out clean
    6. Allow to cool before cutting, store in the fridge
