Salted Chocolate Chunk Protein Blondies
These vegan and gluten free blondies are easier than pie, made in the blender, and packed with an extra protein punch

Ingredients
- 1/2 cup cacao espresso almond butter
- 1 can chickpeas drained and rinsed
- 1 cup almond flour
- 1 vegan egg
- 1/4 cup coconut sugar
- 1/2 tsp sea salt
- 1 tbsp date nectar
- 3 tbsp almond milk
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 bar your favorite chocolate protein bar chopped
Instructions
- 1. Blend all ingredient (except the protein bar) in a blender until smooth2. Stir chopped protein bar into the batter3. Pour batter into a lined loaf pan4. Sprinkle sea salt on top5. Bake for 20-25 minutes at 350F, or until a tooth pick comes out clean6. Allow to cool before cutting, store in the fridge
