A few weeks ago I tried out the “impossible burger”, and I have to say I neither loved nor hated it – it was just, well, fine. I do know many people who rave about it, but at $16 a burger, I’m going to need to LOVE it… a lot. I will say, it had been AGES since I’d eaten a burger (even a “veggie” burger, because they just weird me out) and it definitely made me crave another. So that brings us to the unBEETable burger…

I made these burgers using ingredients I already had in my kitchen, chances are you already have them too! For the beets, I used a bag of frozen beets from Trader Joe’s (thawed). It equalled about 3 cups, so you can use fresh or frozen, as long they’re cubed. Just throw everything in the vitamix, blend, and bake! Store in the fridge, and reheat on the stove.

Vegan Beet Burger

Ingredients

  • 3 cups Beets Chopped
  • 1 can Chickpeas rinsed & drained
  • 1 TBSP Olive Oil
  • 2 tsp cumin
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 cube veggie bouillon

Instructions

  • Preheat the oven to 450F
  • Put all ingredients in a Vitamix (or high speed blender) 
  • Blend on high until just combined, be careful not to overdo it (you don’t want a puree, it should be just mixed together) 
  • Scoop out the mixture using 1/3 cup scoop, and form into a patty. Try to make all patties uniform shape/thickness 
  • Place patties on a baking sheet lined with parchment paper
  • Bake for 20 minutes
  • Flip patties and bake for 20 more minutes 
  • Serve on your favorite roll, with slaw and BBQ tahini
